Cheeseburgers with Secret Sauce
SERVES 4-5 | 20 MINS PREP | 15 MINS COOK TIME
INGREDIENTS
600g premium beef mince
- 1/2 onion, finely chopped
- 1 garlic clove, crushed and chopped
- 1 egg, lightly whisked
- 1 toast slice wholemeal bread, crusts removed, soaked in the milk
- 2 Tbsp milk
- 1/3 cup chives, finely chopped
- 1/3 cup parsley, finely chopped
- 1/2 cup grated tasty cheddar cheese
- 2 Tbsp tomato paste
- 1 Tbsp olive oil
- 1/2 tsp Worcestershire sauce
- 8 slices cheddar cheese
Secret sauce
- 3/4 cup mayonnaise
- 1 shallot, finely chopped
- 3 gherkins, finely chopped
- 1 garlic clove, crushed
- 1 Tbsp tomato paste
- 1 1/2 Tbsp Dijon mustard
To serve
- 4-5 white bread rolls, halved
- 4-5 leaves lettuce
- 1 red onion, thinly sliced
METHOD
Preheat the oven to grill.
Place all the patty ingredients in a bowl, season and combine.
Shape into 4-5 patties, cover and refrigerate for 15 minutes.
Preheat a BBQ or frying pan to a medium heat.
Brush the patties with a little oil and cook for a few minutes until crunchy and brown on one side.
Turn the patties over, reduce the heat to medium-low and cook for another 8-10 minutes until cooked through.
Transfer the patties to a roasting dish or oven tray and lay a slice or two of cheese on top of each one.
Cook under the grill for a minute or so until the cheese starts to melt over the patties.
To make the secret sauce, combine all the ingredients and season as required.
Spread the bottom bun with a dollop of sauce, place a patty on top then add the lettuce leaves and slices of red onion.
